Quick 'n Easy Carrot Salsa

Creates: 1 c
Prep Time: 5 m

1 carrot, peeled & grated
1/2 vine ripened tomato, diced
1 T hempseeds
1 t hempseed oil
1 t lemon juice
sea salt
black pepper
2 sprigs of parsley

In mixing bowl, add carrot, tomato, hempseeds and hemp oil. Toss well. Drizzle with lemon juice, add sea salt and black pepper to taste. Toss well. Garnish with sprig of parsley, drizzle of hempseed oil and additional hempseeds.

Additions: serve with Flax Crackers, add garlic, pair with Guacamole
