In preparing to create my "Infused" Sunflower Seeds, I rekindled my love for Celtic Sea Salt.
Hand harvested, sun dried, whole kosher sea salt is my favorite to use occasionaly for any meal or snack I create (along with dried kelp or kombu leaves). With this particular sea salt, the granules are whole, pure and you can taste the quality difference. The Celtic Sea Salts (The Original Brand, with the photo of the gentleman harvesting the salt on the bottle) are found in pink and grey varieties, are hand harvested in a way that preserves the delicate balance of ocean minerals and are a truly a whole sea salt. They provide our bodies with vital minerals for our health!

If you're a 100 miler (that is, sourcing all you need from within 100 miles of where you live, I suggest you search online. There is a table salt mine in Unity, Saskatchewan. I cannot speak on the quality or process they use)
The "Infused" Sunflower Seeds, you ask? Here is my recipe:
1 c sunflower seeds, soaked in fresh water for 6 - 8 hours
1 t Celtic Sea Salts
1/4 t cinnamon
Drain sunflower seeds from their soaking and rinse. Place in a jar or airtight container to be refrigerated. Add sea salt and cinnamon and stir to mix well. Allow seeds to infuse for one day and enjoy as a light and delicate snack!
Why soak the seeds? It "enlivens" the natural enzymes (digestibility factor) in the seeds and allows the body greater ease in absorbing the nutrients. It also allows the sprouting process to occur. Sprouts area a living food abundant in nutrients and energy (ps.... add them to your breakfast shakes for added "pow"!)
Why not buy roasted, salted sunflower seeds? Roasted seeds are no longer a healthy, living seed/food. This process chemically alters the natural structure of the food making it difficult for the body to digest and receive any nutritional value. The salts used are often processed and stripped of their natural, essential minerals. Did you know salt is grey or pink and not often white?
Often these products have become rancid from sitting on store shelves and the concern with high sodium content is simply because the vital minerals are no longer present. When they are present, the body naturally metabolizes and processes the food. Imagine being able to enjoy food the way nature intended! We can, and do.
