Cream of Spinach Soup

oh so tasty, nourishing and 3 (ok, 4) easy ingredients!

Creates: 4 c
Prep Time: 5 m

1/4 c almonds
1 c water
2 c (1 bunch) spinach
pinch of sea salt

Add all ingredients into high-speed blender. Blend on high to creamy smooth. Add salt to taste. Garnish with fresh parsley leaves.

Additions: Almonds may be soaked up to 4 hours prior and peeled. Another option is to blend almonds and water first and strain mixture through nutmilk bag or strainer and set aside the nut fiber for additions into smoothies, cookies and cakes. Add remaining ingredients and blend. This version creates a very smooth broth with little texture.
