Mango Ice"Cream"

So luscious, creamy and delicious. A very rich dessert and perfect to complete a spicy curry dish such as the Curry Pot. Enjoy.

Creates: 1 cup (Serves 1 or 2)
Prep Time: 5 minutes

1 cup mango, cubed, frozen
1/4 cup cashews
1/4 tsp cinnamon

Add ingredients to VitaMix and blend well. If using fresh mango, blend ingredients and add to ice cream maker and follow manufacturer's instruction.

As a side note, I added up the total amount to make this recipe. With the cashews being the most expensive item, $3.33 is the total. And as it is almost a meal in itself as it is so satiating, this is quite a deal. I would also recommend the option of using 2-3 Tablespoons of cashews rather than the 1/4 cup as it will still provide the creaminess for a truly smooth ice "cream", bringing the value to around $2.00. Who says eating gourmet, healthy, rich food is expensive? ;) You're worth it anyway!
