Salad:
3 sunburst scallopini squash*2 heirloom tomatoes
1 courgette
cold pressed olive oil
fresh basil
Slice each of scallopini, tomatoes and courgettes into thin to medium rounds. Stack in alternating layers, drizzle with olive oil and garnish with fresh sprig of basil.
