Creates: 5 servings
Prep Time: 15 minutes
1 ripe mango
3/4 c almonds
5 medjool dates
1/4 c coconut, shredded
4 T lemon juice
Dice mango and add to bottom of serving dish.
In VitaMix or favorite high speed blender add almonds and grind to medium fine texture. Transfer to mixing bowl.
Remove pits from dates and add dates to blender. Blend to smooth. Transfer to mixing bowl with almonds.
Add coconut and lemon juice to almond and date mixture and blend well.
Top diced mango with mixture and press firmly.
Set cobbler into freezer up to one hour prior to serving.
