Perfect Spinach Salad

Metta, the Pali word for lovingkindness, is one I am using today on the topic of food. Love your food. Since it becomes a part of you it makes sense to have a healthy & great relationship with it!

My Favorite Spinach Salad

Creates: 4 cups
Prep Time: 5 minutes

4 cups spinach, washed and diced to bite size pieces
1/2 vine-ripened tomato, diced
2 Tbsp hemp seeds
1/4 tsp celtic sea salt
1 Tbsp lemon juice
hempseed oil

Arrange spinach leaves onto serving plate, top with diced tomato, hemp seeds and sea salt. Drizzle with lemon juice and hempseed oil.

Lovely, luscious and so nourishing.
