Vegan Mayo

Creative things happen when in the kitchen with Mom...

Vegan Mayo

Creates 1 c
Prep Time 5 m

1/4 c cashews
1 T lemon juice, fresh squeezed
1/4 t celtic sea salt
3/4 c water
1/2 t agave nectar

In mini blender, add all ingredients and blend to creamy smooth consistency. Optional to add olive oil however will give the mayo a distinct olive flavor.

Pour atop freshly shredded purple & white cabbage and carrots for a perfect coleslaw!
