Tonight's dinner inspired by a stop at Safeway on the way home from Paul & Lillie's SW Laser Seminar. Fresh jicama, organic cucumber, avocado and home grown sprouts rolled into nori sheets.
Creates: 24 pieces
Prep Time: 20 min
4 sheets dried nori
1 small jicama (grapefruit sized)
4" cucumber, thinly sliced length-wise
1 avocado, sliced into wedges
1/4 c spinach leaves
1/4 c sprouts
Peel and dice jicama into food processor. Pulse to create fine, rice like texture.
Lay one sheet of nori onto sushi roller (available in Asian isle of grocery store). On end closest to you spread ground jicama, add cucumber, avocado, spinach, sprouts and any other vegetables of choice (ie/ carrots, red pepper). Roll tightly into roll. Slice in half and each half into thirds, creating 6 equal size pieces.
