A Fresh & Tasty Almond Milk

With a few extra raw almonds on hand, here is a frothy, refreshing drink to enjoy.

1 c almonds (soaked, up to 8 hours)
4 c fresh water
1/4 t celtic sea salt
1 medjool date, 1 t honey or 1 t agave nectar (optional)
dash of cinnamon

In high-speed blender, place almonds, fresh water, sea salt, sweetener of choice (optional). Blend on high to creamy smooth consistency. Pour mixture through a strainer such as a nutmilk bag or fine cloth, into a glass or jar. Add a dash of cinnamon and enjoy.

Additions: great on fruit, in shakes, smoothies, breakfast cereals. Add vanilla bean or nutmeg.

The almonds pack a great punch of calcium, healthy fats and vitamin E, magnesium, potassium and manganese!

Soaking releases natural enzyme enhibitors found on most nuts and seeds. A natural protective layer is formed on nuts and seeds to weather the natural elements. In releasing these, the food becomes easier to digest and absorb for optimum nutrition. This also softens the skins as well, making them easier to digest too.
