Tasty Mango Salsa

...very fresh and easy too...

Fresh Mango Salsa

1 ripe mango
1 yellow bell pepper
1/4 medium white onion
1/2 T olive oil
lemon
sea salt
black or green pepper

Medium size dice mango, pepper and onion. Drizzle with olive oil and fresh lemon juice. Add freshly cracked sea salt and peppercorns. Toss and serve. Garnish with finely diced cilantro.

Very nice served with romaine leaves, fresh vegetable slices and fresh fruit. Try with multigrain chips, raw or baked for transitioning options.
