Avocado Romaine Boats w/ Seasoned Okra Starter

A trip to the local organic market and with the freshest ingredients in hand, tonight's dinner, an easy one to bring together. Beautiful colors, fresh scents and new items, most of them local!

Servings 1 | Prep time 15 minutes

Avocado, Courgette, Tomato on a bed of Romaine
w/ Cashew "Parm" Cheese

1 small head romaine lettuce
1/2 vine ripened tomato, diced, seeds & juice set aside
1/2 small courgette (zucchini), julienned
1/2 haas avocado, diced
1 large clove garlic, minced
lemon juice, freshly squeezed
cashew nuts, finely pressed
black sesame seeds
cilantro

Gently toss all ingredients and lay nicely on fresh bed of romaine leaves. Garnish with seeds & cilantro. This is a beautiful dish for one as a main or many as a side or salad. Wonderful for little ones too for creating "boats" with the leaves to fill :)

And with fresh okra* in the basket, I created a nice starter...


Seasoned Okra with Citrus Glaze

4-5 pieces fresh okra
lemon juice
garlic, minced
seeds & juice of tomato
basil

Slice okra in halves and place on serving tray, drizzle with lemon juice and garlic. Blend tomato juice, add basil and serve.
