Coconut Carrot Cake w/ Orange Walnut Encroúte

4 c pulp from carrot juice
1/3 c carrot juice
1/4 c coconut
1 T coconut butter
1/3 c raisins with soak water*
1/4 c walnuts medium ground
4 T agave

Blend all ingredients together at gentle speed in Vita-Mix or favorite blender. Spread onto serving tray and form into desired shape. Top with favorite raw icing, fresh sliced fruit or finely ground nuts. Serve with a beautiful vanilla bean ice cream. Enjoy :)

*soak raisins for 5-10 minutes prior to adding to mixture to allow enzymes to activate and include soak water in mixture.
