Minted Cashew Butter

1/2 c cashews
1 T lemon juice
4 fresh mint leaves
1/8 t salt

Blend well, adding lemon juice as required for a lusciously smooth & creamy buttery texture. Serve generously with freshly prepared flax crackers or your favorite flat"bread". Enjoy.

Stores freshly in refrigerator for up to 3 days.
