Cucumber Canape's


1 medium cucumber
1 small clove garlic
1/2 apple
1 sun dried tomato, soaked
1 T pine nuts
sea salt


Slice cucumber into 1" wedges. Scoop out a small portion of the inner flesh with small scoop or spoon, leaving a "bowl" for filling. Place flesh into small/mini hand blender and add garlic, apple flesh, sun dried tomato, pine nuts and sea salt.

Arrange cucumber slices onto serving tray and fill with tomato garlic mixture. Garnish with fresh basil leaves and freshly cracked black peppercorns.
