Spinach Fennel Salad w/ Apple Walnut Dressing
a beautiful spring salad balanced with the heartiness of walnuts and the sweetness of agave nectar.
Salad:
1 large bunch of spinach
1/2 cup thinly sliced anise bulb
1/4 cup coursely ground walnuts
1/2 apple peeled & sliced
1/4 cup fresh fennel herb*
Dressing:
1/2 cup chopped fresh fennel herb
1/2 apple, peeled & cored
1/4 t lemon juice
1 clove garlic
1/4 c walnuts
1/8 t sea salt
Blend well into smooth consistency.
For plating, create bed with spinach on serving platter, arrange anise & apple slices. Drizzle with dressing salad, sprinkle with walnuts and top with fennel. Drizzle with agave for a beautiful glistening touch!

*Fresh fennel, also named anise, has a beautiful white bulb, great for slicing into salads and blending into dressings. The stems of the plant are a very fine herb, similar to that of dill. Fennel herb is wonderful for salads, dips and dressings.
