Citrus Bok Choy

This dish is so beautifully versatile and flavorful, your guests will be asking for the recipe!

1 small head of bok choy
1/4 cup fresh mixed bean sprouts
1/2 mango
1 small bunch tarragon
1 small bunch cilantro
3 T olive oil
1-2 cloves garlic
Himalayan sea salt
1/4 cup raw cashews

dice bok choy and place in bowl, toss with sprouts. dice mango and tarragon together, allowing mango to beautifully incorporate herb flavor, add to choy and toss well. combine cilantro, oil, garlic and salt in mini blender, toss into choy mixture. serve in beautiful, crisp white platter and sprinkle with fresh raw cashews. bon 'apetite! or shall we say 식욕이 왕성한
